Avocados are not only delicious, but they are also very good for you. That’s why it’s not surprising that there’s a National Avocado Day in the US. This year it falls on Thursday, July 31.

This superfood is native to Mexico and Central America, but it’s grown in many other places, according to Healthline. In the US, most avocados are grown in California to the tune of 400 million pounds a year. This is no surprise since avocados are soaring in popularity due to their nutritional content and health benefits.

A Traditional Food
Avocados have played an important role in traditional Latin American cuisine, in guacamole, salads, and mashed on a tortilla or flatbread. In fact, this early form of avocado toast has been eaten for centuries.

First, pick ripe—but not mushy or overripe—avocados. Remove any black or brown bits after opening. Next, pick a sturdy, hearty bread like a whole grain that is sliced thick. Toast well so that it is a sturdy base for your avocado.

One of the most popular avocado toasts adds eggs to make a healthy, protein-packed breakfast, according to the Feel Good Foodie blog. This recipe includes four different ways of making eggs that will top the toast—fried, poached, scrambled, or hard-boiled—and combined with a healthy grain bread and the good fats from the avocado, they make it very good for you.

Vegan Avocado Toast
This easy-to-follow recipe from the Vancouver With Love blog adds seasoned mashed chickpeas to add a plant-based protein to a basic avocado toast. All you need is 10 minutes and a few ingredients, including vegan bread—or use gluten-free bread—avocado, chickpeas, and apple cider vinegar. You can also add microgreens, radishes, and herbs to dress up your toast.
